Paul Martin’s American Grill Announces First Location to Open in Scottsdale Spring 2014
Paul Fleming announced plans to open Paul Martin’s American Grill in Scottsdale at the Borgata Shopping Center. This is the first location for Paul Martin’s American Grill in Arizona as well as its first location outside of California. Paul Martin’s sixth location in Mountain View, CA, recently opened in December 2013.
The concept was co-founded by Paul Fleming, who is widely regarded as one of the restaurant industry’s most creative concept developers. Associated with other critically acclaimed restaurants, Fleming developed P.F. Chang’s China Bistro, Fleming’s Prime Steakhouse & Wine Bar, and Pei Wei Asian Diner. Fleming is also one of the founding partners behind Z’Tejas Southwestern Grill.

Paul Martin’s serves American Classics with a fresh twist using only the highest quality, peak-of-the-season ingredients. The menu will rotate seasonally with the finest produce, seafood from sustainable fisheries, free-range and natural meats and poultry. Fleming’s passion for wine has also played an integral part in crafting the restaurant’s renowned wine list comprised of over 100 labels, 80 of which are available by the glass.
The brand new 6,552 sq. ft. location in Scottsdale will feature a seasonal menu of contemporary American dishes and cocktails hand-crafted in a “scratch” kitchen. Taking the signature Paul Martin’s look, the restaurant design will be focused on creating a comfortable and timeless atmosphere with a mix of private, public, and communal dining spaces.
