Chago’s Cantina kicks off 2014 serving 100% grass fed local proteins from a well respected Tennessee Farmer. “We are committed to provide the Nashville community with unique freshly prepared food that features an abundance of healthy choices from Vegetarian to Vegan & now Farm to Table selections!” stated Chad `Chago’ Head owner/chef of Chago’s Cantina. “And we are excited to partner with Gourmet Pasture Beef who raises their animals in a humane, grass-fed and chemical-free environment.”

A little bit about what we are serving

As part of Pasture to Plate – Chago’s Cantina now offers a `Weekly Roast’, where we bake a whole pig, lamb or goat along with a variety of fresh vegetables in what is called a `caja asadora’ (Chinese box) and slow-cook the meat for 6 to 8 hours. We create `a special of the day’ highlighting the tender, flavorful meat. In addition, the beef in our popular Carne Asada and Burrito Gordo, which we offered daily, comes directly from Gourmet Pasture Beef farm.

Gourmet Pasture Beef is located in Springfield Tennessee and raises only the finest 100% grass fed and grass-finished beef on high quality, local forages in Robertson County.  The animals spend their lives enjoying grass/forages until they are large enough to finish, 900-1000 lbs. Gourmet Pasture Beef spends an additional 60-90 days finishing them on the highest quality forages/hays to fully develop the marbling fat that provides the exceptional taste. They never administer hormones or antibiotics to the animals and they are never fed grain!

Each cut is hand butchered in a local USDA facility where it is dry-aged for a minimum of 14 days to insure you receive home raised quality in every bite! Chago’s Cantina started on March 14th 2011 in the Nashville neighborhood of Belmont/Hillsboro. We have a blend of traditional Mexican and Mexican American fair crossed with dishes from down south that will surprise anyone. All of our beef is locally sourced from grass fed and grass finished cows. We take time each week to prepare locally raised whole animals for our specials that are forever changing. Every item on this menu is prepared daily by Chad and his devoted friends in the kitchen.

We are a true neighborhood bar serving a full range of offerings. We have the best priced happy hour in town with daily drink and food specials. The décor has been bought from local antique and consignment stores (which is a direct reflection of Chad’s personal taste). The music ranges from Marvin Gaye and Bob Marley to Daft Punk and Justin Timberlake, so don’t be surprised, it is never the same.
