Cowboy Chicken Continues to Expand to West Texas through Franchise Growth.

Cowboy Chicken, the popular nine-unit Dallas-based fast casual wood fire rotisserie chicken brand, has signed their newest franchisee, Cowboy C West Texas, LLC. The 5 store development agreement will expand the Cowboy Chicken brand to West Texas, starting with Lubbock, a place that holds deep roots for several Cowboy Chicken corporate team members. President Sean Kennedy, Franchise Operations Director Chris Mastin, and Longview General Manager Brad Everett are all graduates of Texas Tech University.  When Cowboy C West Managing Partner Brent Shankle, along with Operations Partner Shannyn Taggart expressed interest in taking Cowboy Chicken West to the Red Raiders, it seemed like a natural fit!

Cowboy Chicken Welcomes New FranchiseeBrent is currently the Vice President for his family’s 74 year old trucking company, Robert Heath Trucking.  His obvious dedication to work and family made him a perfect candidate to join Cowboy Chicken as the next franchise owner. His operations partner Shannyn has been in the restaurant industry for years and brings managerial and operations experience from one of the country’s largest fast food companies.  Together their dedication and experiences are a true example of all that the Cowboy Chicken concept embodies.

As a resident of Dallas for several years, Brent was a Cowboy Chicken fan from the start. When Brent first entered the Greenville location in Dallas, TX, Brent knew that Lubbock was in need of a fast-casual dining concept like Cowboy Chicken. “In Lubbock and West Texas in general, we don’t have an option for quick and healthy dining. For me, Cowboy Chicken is a place where I can eat multiple times a week and feel good about it, without cooking in the house if I don’t have to. Healthy food served in a fast-casual dining experience is a growing need for today’s society, and I’m excited to bring it to West Texas”, Shankle said.

Being involved in the community is a number one goal for him, all the while creating a good name for Cowboy Chicken, helping the brand grow and succeed. Shankle wants to bring the signature wood fire rotisserie chicken to all of West Texas residents. In 5-7 years he would like Cowboy Chicken to create a major presence on the West Texas dining scene.
