MAD Greens opened its first location in Centennial, Colo, on Dec. 10, 2004. That restaurant, still open today, was joined by 11 other locations, each serving healthy food with a big dose of fun.

“As we enter a new decade, we have a bright future ahead, with a new restaurant prototype and plans to expand beyond Colorado,” notes MAD Greens co-founder and chief strategy officer Marley Hodgson. “But we look back at our past with gratitude for the millions of customers that embraced something very new, and that continue to crave our Inspired Eats.”

A local favorite, MAD Greens has served more than 7 million customers, who choose salads, soups, wraps and panini sandwiches for a healthy lunch or dinner, scratch made with the highest quality ingredients. In total, the chain has served up more than 200 tons of spring mix, 1.9 million heads of romaine lettuce and 60 tons of spinach.

MAD Greens is committed to using local companies and locally sourced ingredients on its menu whenever possible. Over the years, the chain has partnered with local farms to provide its lettuce, vegetables, and herbs, and even started its own farm in Elizabeth, Colo., in partnership with Agriburbia. The company also chooses local and like-minded brands to provide healthy ingredients for its customers. Local brands served in MAD Greens restaurants include Bing Energy, Boulder Organic Tofu, Colorado Native Beer, Izzio’s Artisanal Bakery, Jumpin’ Good Goat Dairy, Olomomo Nut Company and Rice’s Honey.

Known for healthy food with a big dose of fun, MAD Greens serves up “Inspired Eats,” high-quality ingredients served fresh in interesting combinations. Salads, wraps, soups and panini sandwiches fill out the lunch and dinner menu. MAD Greens currently has 12 locations in the Denver-metro area, Boulder, Longmont and Fort Collins. The eatery is open seven days a week for lunch and dinner.
