Portland Gets Set for Its Second Helping of Zoup!Popular fast-casual fresh soup restaurant prepares for July 30 grand opening in Beaverton

Portland Gets Set for Its Second Helping of Zoup!Portlanders got their first taste of the award-winning, healthy soup recipes made popular by Zoup! just over a year ago. And they want more!

Fortunately, franchisee Brian Carney, and his parents Dave and Alex Carney, are happy to oblige.

The Carneys’ second area restaurant, located in the Cedar Hills Crossing II at 2695 S.W. Cedar Hills Blvd. in Beaverton, is holding its grand opening on Thursday, July 30.

“We have been overwhelmed by the reception our first Zoup! has received in Wilsonville, and we can’t wait to introduce the good folks in Beaverton to all the wonderful soups, freshly baked bread and other delicious items we offer,” said Brian Carney. “Everyone loves soup, but most of us are used to getting it out of a can or when we go to grandma’s house. I invite everyone to stop by and experience soup in a convenient, healthy and refreshing new way, with all the variety you can imagine. Just try us once, and I bet you’ll be a fan for life!”

With more than 80 restaurants in 18 states and Ontario, Canada, excluding the District of Columbia, Zoup! is carving out a unique niche in the rapidly growing fast casual dining segment.

“Soup is the very definition of comfort food, but it can also be a healthy, nutritious and satisfying meal,” said Eric Ersher, Founder and CEO of Zoup! “We believe the Portland area is an absolutely ideal market for our hand-crafted soups, and the Carneys have proven that they know how to take excellent care of their customers.”

Portland Gets Set for Its Second Helping of Zoup!In addition to its unique and diverse menu, Zoup! is built on a foundation of guiding principles called Zoup!isms.

“Our Zoup!isms provide a framework for decision-making and help create a strong culture and brand image,” Ersher explained. “They also dictate the brand’s uncompromisingly high standards and help guarantee the authenticity and quality of every pot, bowl and cup served.”

Prior to its official grand opening, the new Beaverton store will hold a fundraiser on Wednesday, July 22, from 5 – 8 p.m. Guests may order a bowl of their favorite soup, a hunk of fresh-baked bread and a small drink for $5. All proceeds will be donated to Everyday Warrior, a 501(c)(3) not-for-profit organization dedicated to inspiring, empowering and financially supporting individuals in the CrossFit community who have been diagnosed with cancer and are currently undergoing treatment.

“I have watched Everyday Warrior grow for these past few years, and I can’t tell you how impressed I am with the powerful work they do every day for cancer patients,” said Carney. “I’m really proud to dedicate our pre-opening fundraiser to this organization, and I hope lots of folks turn out to enjoy some delicious soup and help us make a meaningful difference.”

The new Beaverton restaurant will be the third Zoup! in the Beaver State and the 83rd system-wide. It will be open from 10:30 a.m. to 9 p.m. weekdays and 11:00 p.m. to 8:00 p.m. Saturday and Sunday.
