Southfield, MI-based ZOUP! FRESH SOUP COMPANY (founded 1998) has increased by 30 units, from 55 to 85 (55% growth) and entered into DE, IA, NE, NY, OR, SD, VA and WI.  The restaurants are fast casual, open for lunch and dinner, with a $4-$12+ per person price range.  Stores have seating for about 60 and offer catering, private party and online ordering services.  Units are franchised and trade in CO, DC, DE, IA, IL, IN, KY, MA, MI, MO, NE, NY, OH, ON, OR, PA, SD, VA and WI.

Annapolis, MD-based LEDO PIZZA (founded 1955) has increased by 4 units for the Urban Bar-B-Que concept, from 5 to 9 (80% concept growth).  The company also operates 98 Ledo’s Pizza locations.  Urban Bar-B-Que is fast casual, open for lunch and dinner, with an $8-20+ per person check average.  Average seating is for about 60, serving beer and wine.  Ledo Pizza units are family/casual, open for lunch and dinner, with a $6-$15+ per person price range.  Average seating is for about 90, offering beer and wine (full bar at select locations).  Catering is available at both concepts.  Trading areas are DC, FL, MD, SC, VA and WV.

Boston, MA-based FIRE & ICE GRILL & BAR (founded 1997) has increased by 1 unit, from 4 to 5 (25% growth).  This family/casual concept serves American cuisine and is open for lunch and dinner.  Per person check average is $10-$30+, with full bar service and seating for about 250. Trading areas are CA, MA and RI.

Colorado-based HAPA SUSHI GRILL & SAKE BAR (founded 1999) has added a new concept called Motomaki (1 unit).  Hapa Sushi Grill has 4 locations.  Overall company increase was from 4 to 5 (25% company growth).  The restaurants are family/casual, serving sushi and Japanese cuisine.  Meal periods are lunch and dinner, with a $10-$30+ per person check average.  Beer and wine are served and seating is for about 90.  Catering and online ordering services are available.  All the restaurants are in CO.

Santa Fe, NM-based SANTA FE DINING RESTAURANT GROUP has added a new 2-unit concept called Draft Station.  Other company concepts are Blue Corn Café (1), Blue Corn Café Brewery (1), Chama River Brewing Co (1), La Casa Sena Restaurant & Cantina (1), Maria’s New Mexican Kitchen (1), Rio Chama Steakhouse (1) and Rooftop Pizzeria (1).  Overall company increase was from 7 to 9 (29% growth).  The restaurants are family/casual, serving mostly Mexican cuisine.  Per check average is $8-$20+, with average seating for about 200.  Locations have full bar and offer catering and banquet services.  All the restaurants are in NM.

Nevada-based KEVA JUICE (founded 1996) has increased by 14 units, from 18 to 32 (78% growth) and entered into UT.  This is a fast casual juice/smoothie concept, open for breakfast, lunch and dinner hours.  Per person price range is $4-$12+, with average seating for about 10.  Locations are individually owned and operated and trade in CO, FL, NC, NM, NV, TX and UT.

Countryside, IL-based COOPER’S HAWK WINERY & RESTAURANT (founded 2005) has increased by 6 units, from 13 to 19 (46% growth) and entered into VA.  The restaurants are upscale, open for lunch and dinner, serving American cuisine.  Per person price range is $15-$50+, with average seating for about 300.  The restaurants have full bar and offer catering and banquet services.  Trading areas are FL, IL, IN, MO, OH, VA and WI.

Tampa, FL-based BURGER 21 (founded 2010) has increased by 1 unit, from 16 to 17 (6% growth) and entered into TX.  The restaurants are fast casual, open for lunch and dinner, with a $6-$15+ per person price range.  Beer and wine are served and seating is for about 80.  Online ordering is available.  The restaurants are franchised and trade in AZ, FL, GA, NC, NJ, NY, TX and VA.  We last wrote about this concept on 7/15/14 (15% growth).

Centennial, CO-based THE EGG & I (founded 1987) has increased by 18 units, from 98 to 116 (18% growth) and entered into NC.  The restaurants are family/casual, specializing in breakfast foods.  Meal periods are breakfast and lunch, with a $6-$15+ per person check average.  Units seat about 125 and offer private party facilities.  The restaurants are franchised and trade in AL, AR, AZ, CO, FL, GA, IL, IN, KS, ME, MO, NE, NM, TN, TX, UT, VA, WI and WY.  We featured this concept on 4/16/14 (21% growth).  The Egg & I is a subsidiary of University Park, FL-based First Watch Restaurants.
