Owner Frank Vairo will open his second location in March at 15 East Monroe Street with plans to hire 60 to staff the unit.  The menu will continue to offer the Italian-Mediterranean influence of the original unit with hand-tossed artisan pizza’s and appetizers such as bruschetta, hummus and charcuterie with price points ranging from $10 to $27.

Naples, FL – The Bowl
Originally a Saturday Farmer’s Market pop-up in southwest Florida this new “healthy indulgence” bowl concept based on Acai berry will open their first brick and mortar location in late February at 1427 Pine Ridge Road.  The bowls are available in small and large at $7 and $10 and feature fresh toppings such as seasonal fruits, nuts and drizzles.

St. Paul, MN – Brake Bread
From a bicycle deliver service to a bakery in one crowd-funding step partners Micah Taylor and Nate Houge will open their café bakery concept at 1174 7th.St. West sometime this coming spring.  The 46 seat operation will feature artisan, hand-crafted breads, coffee and a “toast bar” so guests may prepare their own bread-based creations.

Seattle, WA – Great State Burger
Local restaurant vanguard Chef Josh Henderson will continue his new-age burger concept growth up to eleven units with the newest location to open later this month at 3600 NE 45th. St.  The feel will be classic but the taste will be cutting edge with organic grass-fed beef, organic shakes and local produce all served on compostable table wares.

Brooklyn, NY – A&E Supply Co.
Former “Top Chef” alum Adam Harvey will open his casual multi-day-part concept this summer at 548 Fourth Ave.  The restaurant will open early for commuters’ coffee and baked goods until late for dinner and drinks.  Locals can browse and shop from the in-house butcher shop and cheese larder which also supplies the restaurant with its grass-fed meats.

Dallas, TX – BuzzBrew
This eclectic 24-hour eatery serving breakfast to beers with classic burgers and southwestern fare will open their new unit at 2200 Victory Ave in spring, 2016.  With a respectable wine menu a grand variety of craft beers will be available to wash down chips and salsa, pulled pork sandwiches or one of several vegetarian offerings.
