Fusion cuisine has had some interesting combinations historically but this may be the “topper” as this fast-casual concept brings together Hawaiian and Mexican food staples for late spring opening at 220 15th. Street East. Poke-style bowls or burritos of sushi grade fish and grilled chicken are menu leaders.
Washington, DC – Verts Mediterranean
This Austin, TX fast-casual hot spot is stretching their legs to enter the DC market at 1001 Connecticut Avenue NW for a late summer, early fall opening. Their claim of many menu options at or under 600 calories includes a pita, rice or salad base topped with protein, vegetables and a variety of sauces.
Chicago, IL – Marisol
Named for the famous French-Venezuelan artist Marisol Escobar this fine-casual concept will open in the Museum of Contemporary Art at 220 E. Chicago Avenue in July. The venue will seat 125 with a menu focusing on lighter fare of shared-plates of hummus, vegetables, handmade pasta, aperitifs and wine.
Cleveland, OH – Marble Room and Raw Bar
Renovations to the historic Garfield Building (Circa 1895) will reveal a combination steak house and raw bar with a projected opening of late spring at US-20 E. 6th. Street. In addition to the restaurant and bar area there will be banquet space for 150 guests. The remaining first floor will be upscale retail shops.
Knoxville, TN – Elkmont Exchange Brewery and Eating House
Life-long friends, Brewer Alex Violette and Chef Ryan Davenport will open their casual brew pub concept at 745 N. Broadway late this year. The menu is still under development and Chef Ryan will maintain his culinary focus as his internationally acclaimed Brewer partner focuses on the beer styles for their guests.
Portland, OR – SouthFork
Local restaurant entrepreneurs Casey O’Brien and Eric Schindele will bring on Executive Chef Jessica Welch to helm the kitchen when they open late April at 4429 NE Fremont Street. The menu will reflect southern cuisine favorites sensibly priced to complement the Jazz-focused entertainment on weekends.
