Shawn Eby has been named the Vice President of Operations for the Mexican quick service restaurant chain Taco John’s International. Eby joins Taco John’s with 26 years of experience in the restaurant industry and was most recently the Senior Director of Franchise Operations in the Northeast region for Arby’s Restaurant Group.
“Once people across the country start realizing what Taco John’s is, I think it can be huge,” Eby says. “It might be aggressive, but I think we can double the number of locations in five years. If we work on brand awareness and drive more trial, we’re going to start blowing up across the country.”
To help accomplish this goal, Eby plans to streamline equipment, enhance consistency of operations and improve speed of service.
“If we reduce the cost of equipment, it would make it more feasible for franchisees to come in,” says Eby. “It would also help out with speed of service. I like the fact that we’re making items fresh, and I don’t want to get away from making them at that moment.”
Intrigued by Taco John’s culture, food and brand loyalty from employees and guests, Eby believes that encouraging and rewarding employees for outstanding service will set Taco John’s apart from the competition.
He enjoys training and developing employees and hopes to move the Taco John’s brand forward alongside the leadership of recently hired CEO Jeff Linville.
