Taco Republic Takes Over Kansas City

Bread & Butter Concepts’ 5th restaurant opened on September 25th. The new restaurant, Taco Republic, is a fun and relaxed environment serving street-style tacos with a variety of ingredients; Bocaditos (snacks) including several tortilla chips & dip combinations; and a to-go only option: Wood-Fired Pollo (chicken).

Taco Republic’s atmosphere is a laid-back and lighthearted scene in a repurposed gas station with available indoor and outdoor seating, lawn games and a general feeling of welcome. The bright color scheme is enough to elicit a smile, while the retro-artwork both inside and out call forth the nostalgia of a roadside taco joint.

Taco Republic has already garnered a strong following due to the presence of the Taco Republic Truck on the streets of the Kansas City metro area. Locals have gotten a chance to sample the offerings on an abbreviated menu and the response has been excellent.

A Taco Truck favorite is the Tecate Barbacoa taco with beer & chile braised beef brisket, cilantro and onion. This basic taco carries its flavor in the meat. Other options are complemented by stronger topping flavors.

In addition to indoor and outdoor seating, Taco Republic features a walk-up to-go window. This is where the to-go only Wood-Fired Pollo will be available. This authentic chicken comes with charro beans, rice and soft tortillas, and is available in half and whole chickens. The Wood-Fired Pollo is prepared in limited quantities. A neon sign by the walk-up window on the east side of the restaurant will flash either “Pollo” or “No Pollo” to indicate whether the chicken is available or not.

Not to be forgotten is Taco Republic’s excellent bar. With a variety of beer, margaritas, sangria and tequilas, guests will find the perfect libation for whatever their thirst.

It’s the food, however, that will truly attract a crowd. The street-style taco is an authentic mix of corn tortillas (flour tortillas available on request), slow-cooked meats, seafood or veggies, and delectable toppings.

The Cochinita Pibil, familiar to fans of Robert Rodriguez and Johnny Depp, is a Yucatan-style slow roasted marinated pork with pickled purple onions that take the taco to a whole new level. Another crowd favorite is the Tinga taco: a chicken taco with pollo rojo, Monterey Jack, salsa fresca and iceburg lettuce. Those with a taste for the spicy will opt for the Feliz, a chicken taco that sports a jalapeño purée you’re tastebuds will remember.

The official grand opening occurred on Wednesday, September 25, 2013.
